Day 11 - Life of Cheese


Our little cheesey friend has been washed with the solution again. You can see the scrap marks from the brush as it delicately scratched the surface of the cheese. The slightly orangey tinge is starting to show. This is the yeast growing on the rind.

  1. The colour is really starting to come through. It's starting to look like the Washington we are all familiar with. How much milk do you need to produce one of these cheeses?

  2. From one litre of milk, approximately 120gms of cheese is made. That is approx 12% yield, which is not much at all really!!
